Yessir. My fish experience until I was old was pretty much exactly as you describe
My grandparents had a farm in S. Illinois with ponds on it. Grandpa would feed the the catfish in the pond, and we would frequently spend a few hours on a Friday/Saturday afternoon catching fish for a fish fry. So catfish/walleye/perch until I was out of college, when I was introduced to sushi. Love salmon and ahi tuna now, but it's pretty infrequent that I get it. In Gibson City you had your choice of fried catfish or MAYBE a fried walleye sandwich if you trusted the Catholics enough to eat with them on a Friday. My dad (who will be 80 this August) just started eating grilled Salmon in the last 10 or so years.
