It was a throwaway cut as it's virtually fat free. You have to know how to cook it or it can turn into shoe leather in about half a minute. It also, suffers under bbq snobs as not being bbq as you cook it hot and fast not slow and low. That said, it's perfect for our family. My wife HATES fatty cuts of meat (except my doughy ass). I build a hot fire of oak whiskey barrel staves and sear both sides direct then move off indirect for a short while longer. When the fat part of the steak feels like your cheek, you're done. Let it rest and slice it thin with grilled onions, pepper and bbq sauce and it makes a heavenly sandwich. But again, alot of people fuck it up.
