Ginger, I don't know if you read much but if you do, then you generally know when someone is using symbolism to make a point and when it is more literal, it is basically the same thing with the Bible.
Okay, so you believe this...but not when it is applied to all the different times the Bible has been re-written.
I could leave it at what suffices for me - but that won't be a good enough answer for you apparently since I have already touched on this before. I will give you a more technical answer later on - when I have had enough time to study the reasoning on why the translations are reliable from a historically documented view. For now(for the sake of this argument), I do believe they are accurate, I do believe that God could easily have imposed His will to ensure the accuracy of His Word, and I do not believe it is up for individual interpretation.
The same could be said regarding GIT. How can you possibly KNOW the unknowable? All anyone has is faith. They put their faith in what they believe, in their heart, to be the truth/Truth.
We can know it because of the Bible and what it says. Most Christians profess the Bible to be the inerrant Word of God. Those who choose to not believe the Bible as God's Word, make up their own belief system according to what feels right or seems right to them. In doing this, we are back at the all truth is relative theory - and that just cannot be so. Accoding to this point of view all things go if it is what is truth to that individual - can't say anyone or anything anyone does is wrong.
