I'll send you a scan of the choke wiring section from my factory manual on Monday. It was a mad house at work yesterday and I didn't have time to check the forum. I don't have good internet here at the house.
I also forgot my manual at work so what I'm about to type is from memory. This is also from a 1981 Factory manual, but I would imagine the choke wiring should be similar for all.
The choke/oil light is on a different fuse than the main choke fuse. If the choke fuse is blown that would cause the choke light to stay on. Also like you are thinking if the oil pressure switch has gone bad or the connector has come off the light will be on. You can also check the choke fuse without crawling under the dash. The fuel-vent solenoid is on the same choke circuit but is not controlled buy the pressure switch. So if you have 12V there with the ignition on your choke fuse is good.
I replaced one of the oil pressure switches a few years ago, I found it on Rockauto. About $10 if I recall right. Also it sounds like your planning on keeping your Chevette forever. I'd recommend getting one of the factory repair manuals. They show up on ebay and the like every so often and are way better than the Haynes/chiltons offerings.
