oven has adequate time to come to temp with the water in there. My wife has a Panera gift card from her job and got a baguette from there on Saturday and it was ass. Weak crust, crumb needed to proof a little longer, needed another 60 seconds in the oven, was light on salt. We ate one end and tossed it.

Do you need anything special for baguettes? I thought it needed a special steam oven or something to get the crust right.

Used to be you good get a decent baguette at any grocer but now they are all shit. I’ve been going to a local baker for baguette but I’m game to try at home.

croissant is far too much effort to try at home, but that basic breads like baguettes are super easy. I do a batch of baguette or pan de cristal every other weekend and have become an insufferable asshole about any bread that I eat outside of my house.
