The problem is the design. Things need to be reversed. The main waiting area where you have restaurants/shops/bars needs to be outside of security. You are then welcome to come to the airport whenever you want but you cannot come through security until your plane is called. There will be no waiting near gates. You go through security straight to the plane.
All of this would be fixed overnight. But they'd never go for it. People wouldn't have to come to the airport 3 hours early and wouldn't buy food and drinks.
