Have you looked at the actual parish records for Ilsington? re the missing marriage?
I have outlined in other comments that I think Samuel was apprenticed, his master died, he stayed on a bit with the masters daughter and her husband, then ran away and joined the army using his mothers maiden name ( kept using that so he could get his pension in that name). Came back and he and Winifred together. Depends if she was living somewhere else perhaps as a servant, so it could be a parish not on I.G.I.
