Peking duck is a simple preparation. Rub duck with salt,honey and five spice powder, red food coloring optional. Hang said duck in a cool environment for 3 days, roast and eat. I like peking duck served many ways but the traditional sliced breast with hoisin and plum sauce for dipping, fresh chinese pancakes and sliced spring onions and carrots soaked in ice water is my favorite.
