Grouse Quesadillas - I picked this one up from the staff of Bridge Creek. If you are in Red Lodge, MT, I would recommend stopping in for dinner (or lunch). Ingredients: One or more grouse (or other upland game birds) Your favorite barbeque sauce Brie cheese Tortillas After cleaning up your grouse (or other non-waterfowl game bird), cook until done on a grill (charcoal or gas to your preference), brushing on barbeque sauce just prior to removal. After the bird comes off of the grill, pull the meat from the bones. No need for niceties here - turn big chunks into smaller chunks. Place a tortilla in a warmed-up skillet. Arrange the grouse chunks on half of the tortilla and cover with slices of brie. Try to not put too much of either - this is a quesadilla, not a burrito. Fold the tortilla over and cook, turning once or twice, until the brie melts. I usually use a pizza slicer at this point to cut it into triangle-shaped pieces. This recipe is scalable and it works as part of a meal or as an appetizer. Cheers! Dave K. gun guy gourmand PS - yes, I do know what gourmand means...
