Mr. Burke: You have touched upon a subject that is near and dear to me. Since there is no option for catch & release in this game, good recipes are critical to fully and properly utilize the game the Red Gods provide us. My favorite is so simple I almost hesitate to describe it, but....I will. The game is Ruffed Grouse and the meal is simple but elegant. Cool and dress the bird(s) as soon as is reasonably possible. Whether frozen or fresh, soak in a brine solution (sugar, salt & water) to help draw out any remaining blood and to plump the meat (it seems to give it a more silky texture) De-bone the breast(s) and clean throughly, leaving no connective or shot-damaged tissue, pan fry the meat over medium heat using only a good white wine and butter sauce (a good Pinot Gris or Sav Blanc seems to be best, and for goodness sake - only use wines you wouldn't mind drinking). When the meat firms up and goes from translucent to snow-white, you're done. Serve with a good carbohydrate (little reds or sliced/fried taters, risotto, rice, etc.) and a good fresh and firm green veggie, like green beans, sugar snappers, or asparagus. Salt and pepper to taste and then wash it all down with a nice buttery Chardonnay or a Pinot Gris and you're in upland heaven. Any wild mushrooms are a nice touch and very complimentary to ruffed grouse, such as black trumpets, slippery jacks or morels. Add them to either the meat or the carbs while cooking. I'd go on, but I think I'm going to go defrost some breasts for tomorrow. LM
