I have checked The Crown Jewels 1998 and remain convinced that George V was crowned with St Edward's Crown. The author states that the King was determnined to be crowned using it and discusses alterations made for each Sovereign, after Queen Victoria, that I feel sure it would have been stated there if St Edward's Crown had not been used for George V.
Regarding the many commemorative paintings, they never seem to be capturing a specific moment in time but are a grouping of highlights from coronations.
