Do the rules state that a sauce must be used? If not...and you may not believe this, but if I am not using sauce on my pork steaks more often than not I use taco seasoning...store bought old el paso or the like...use it as a rub and let the flavor marinate into the meat.
Try it before you scoff at the idea..its delicious and unique tasting...
The idea that sauce is the key flavor of any meat is a disgrace to the meat itself...I would rather season and let that enhance the flavor of the meat than hide it in a sauce...just MHO
