I like Minestrone...
1-2 qt of beef broth...
6-8 tomatoes, skinned -- 4-5 ran through the blender..with 2 cloves of garlie. 2-3 tomatoes diced. (I used the roma tomatoes but any will do..)
2 stalks of celery
1/2 onion chopped...
1 carrot chopped finely..
And then I add whatever other vegetable I want..such as zucchini, squash, cabbage, broccoli..it's never the same...
1 can of canneli or northern beans (kidney beans work too...)
1/2 lb of Ditalini pasta and I also like bowtie.
1/4 cup of olive oil.
Basil and oregano to taste...I prefer it fresh..
I usually work with the broth and tomatoes first.. I let the tomato sauce simmer about 30 minutes...and then throw in the chopped veggies...let them simmer another hour...then the canned beans and pasta...within 20 minutes of serving.
My cooking never fits on a recipe card and never tastes the same twice in a row.
I love making Minestrone though. My temptation is to make it very chunky. I will put in a boatload of veggies so that there are very few spoonfuls that are just juice only.
Minestrone goes good with a great loaf of french or italian bread.
