Previous Message 2 full racks. Using honey maple wood...thought I had hickory, but I didn't. Used phytin/harb's rub sparingly on the meat before putting them on the heat. 2 hours at 225 right on the racks. 2 hours on the heat, but wrapped in foil with a little liquid in there (I used apple juice). 1 hour back out of the foil, w/BBQ sauce on the ribs. Thoughts? I'm about 2 1/2 hours in...transferred them to into the foil about 30 minutes ago.
