Yeah you would be surprised at how differently each child reacts to having the mask placed on their face. The anesthetist usually applies a flavored lip gloss, to mask the sevo, but still some children scream and push the mask away... Then unfortunately they have to be restrained. Having the parents in the OR during the induction helps out a lot, as long as the parent isn't nervous. I haven't seen many IV inductions, so I'm not sure what second stage is like with propofol. With sevo, sometimes they sit up, start talking jibberish, fighting, etc.. of course they have no idea they are doing any of this.
