My previous employer did catering for the high society in the area.I learned a lot from that.When I managed a restaurant we'd cater special events and so-called company parties.I did one with just a few helpers Afterwards the company owner came back to the kitchen to compliment me and then he tipped me a very generous amount.It was an Italian-American Cuisine establishment.

Once I was in charge of my church's holiday dinner and served almost 300 souls.That was fun and challenging with the budget I had.I will never do it again even with that successful dinner under my belt lol.

When I would feed a group of missionaries I liked to have a taco salad bar set up.I would serve the taco meat over Fritos and then had a line of salad fixings for a do your own.My brothers and sisters liked that type meal better than a sit down meal.
