My brother used to deer hunt when I was young so we had venision roasts all of the time, the secret to making them so they don't have the gamey taste is to bake them with a beef or pork roast.
I've recently was given some venison sausage with lots of Italian seasoning and hot red peppers in it, I definitely couldn't taste anything gamey about them. The friend who gave me the sausage, stated the easiest way to get rid of the gamey taste was to put a lot of garlic in with it or other seasonings like the Italian seasoning.
