Take Five: Easy chocolate chip cookies

The holiday season is a time to bake batches of sweet treats for family, friends and – let's be honest – ourselves. Too often, though, the days fly by way too quickly, leaving little time for cooking.
Don't fret: You can still squeeze in a quick baking session amid the madness, and this recipe is a prime candidate. Gloria Bogdan of Yorba Linda loves this one for chocolate chip cookies because it comes together so quickly, yet yields an irresistible treat.
"I found this in a very old Bisquick recipe book and even wrote them a letter a few years ago and told them they should consider printing it on their boxes again, since it's such a great, easy recipe!" Bogdan said. "I've given it to many over the years, as I have it memorized. I usually make it and divide into two batches, and freeze one batch to always be ready for any 'cookie emergency.' Optional additions can be added, such as oatmeal, dried cranberries, nuts or coconut. Enjoy!"
EASY CHOCOLATE CHIP COOKIES
Yield: 5 to 6 dozen
2 sticks of margarine or butter, melted
2 eggs
2 cups packed brown sugar
5 cups Bisquick
2 cups chocolate chips
Procedure:
1. Cream together melted margarine or butter, eggs and brown sugar until smooth. Add baking mix and mix well. Add chocolate chips and stir in. Drop by tablespoon onto cookie sheet.
2. Bake at 375 degrees for 15-18 minutes or until browned.
