Had one similar a while back, everything showed good to start. I used easy start just to confirm the engine would run and was mechanically sound, during this time I could see the fuel pressure reading fluctuating quite excessively, although during cranking it looked right, I don't think the sample rate is quick enough to display true pressure, anyway I scoped the sensor and could clearly see a problem, new frp sensor cured mine, I had the exact same symptoms as you too, worth a check
