The Pinfold was where stray animals were kept, its function for stray cattle, pigs, geese, or other domestic animals were driven into the pinfold and kept there until their owners claimed them and paid a fine - The man who looked after the Pinfold was called a 'Pinder, whom you paid the fine too.
