Some of the testimonies above not withstanding, woodcock are not only a fine game bird but also great on the table, at least for those of us who still enjoy a good fried liver dinner once in a while. I suspect the biggest problem is people tend to overcook them. They are very similar to a dove in taste. The current generation of w'cock have discovered what their legs are for, so they don't seem to hold as well for a dog as they used to. An easy way to tell them quickly from a snipe is by the direction of the dark lines on their head. As in that beautiful picture on the Fall Cover, the lines run with the spine for a snipe but perpendicular to the spine on a w'cock. I've hunted them passionately for more than thirty years with three different Brittanies, and all my dogs never hesitated to pick one up. In a couple of weeks, I will be the proud new owner of Brittany number four. It will be my first female, and although she doesn't know it yet, her name is ... you guessed it, Elsie.
