The best hope for a 31 May 1916 Lion are the photographs taken of Lion immediately taken after the Battle of Jutland. The best known was taken the day after Jutland, and which was, I believe, a part of the Beatty collection. A private collector showed me his collection, which included several 1 June 1916 photos of Lion, or different prints of this historic photo. It shows Lion at sea, apparently right after the burial of the Jutland dead. The ship clearly shows a lot of damage. It was printed in the Jutland volume of Marder's From the Dreadnought to Scapa Flow, and in Burt's WWI British dreadnoughts book. Both are small reproductions, and the Burt version is very dark. the private collector appeared to have a large print of the photograph, which shows much more detail.
The other is the crown jewel of Lion photos. It shows Lion in a construction yard with her exploded Q turret removed, but, otherwise, as she was on 31 May 1916. I got my copy from the artist Mark Postlethwaite's photo archive about twenty years ago. This is now the Wingleader Archive:

The catch is that it, apparently is no longer in the archive. I would suggest contacting the archive, and asking for the "Lion after Jutland photo, which was part of Postlethwaite's collection. The great advantage of this photo is that it is a clear photo which shows features of the ship which are not visible in the 1 June 1916 photo.
In addition, there are many photographs and some films on the web which show Lion in her 1916 post-Jutland state.
