For starters, EVERYTHING about it in terms of grams. Not cups or spoons. Not even ounces. GRAMS.
I don't cook like that. Heck, most of the time I don't even measure - or if I do, it's not exact. I tend to view measurements as suggestions more than as the rule of law.
Apparently you can't do that with sourdough.
(Although I have made a couple loaves of pretty darned good sandwich bread following my "measurements be damned" technique...)
But as for keeping it alive, I know you have to discard and "feed" it daily. But every site I look at has different recommendations for how much to discard and how much to feed (and in what proportions). And again, did I mention that every frickin' thing is in GRAMS???? I mean, seriously, am I supposed to haul out a scale and measure every darned thing?!?!?!?!?!?
And then there are the recipes for using the starter. Apparently, there are seperate recipes for starter vs. discards. You can't interchange the two. But I don't understand why not.
If this doesn't start making sense in the next few days, I'm going to kill that darn starter and be done with it!!!!!
