I take chicken thighs or breasts, and brown them in a pan. Then take carrot, onion, mushroom, celery, diced tomato, garlic (add or subtract any spices or veggies you like/dislike) then. Deglaze the chicken pan with some red wine or broth, put the veggies in the crock pot with the juices, then rest the chicken on top. Cook until it's all done usually 5-6 hours. I like it with a loaf of french bread.
