Smart call on not using the pitted gears.
Don't be intimidated by it. It's largely a matter of tolerances, proper interpretation & setting of the R&P gears, and setting preload. Some of them take a lot of time to get just right but after you understand what is going on it makes sense.
The spreader as Scott posted will make the job a little easier.
If you want to "practice" on it, hone the ID of the old carrier bearings & pinion head bearing so they are a slip fit, and try setting it at different pinion depths, and shim the carrier to suit, and you will see the mesh pattern change.
