    Paul, yes you would remove both of the screws, once the long through bolt is out screw it into the other side to take off that side plate. First though make sure that the gun is cocked or else you will not be able to put it back on.
    For the other side to remove, put a 1/8" drift pin or a #8 finishing nail with the point ground off and put it in the long bolt through hole and tap it to remove the other side plate. Do this over a towel or newspaper so that the plate doesn't get scratched when falling out.
    For your first question, who knows. I have a circa 1919 FW E 16 ga with 26 1/4" barrels and the chokes are the right length.
