MY FAMOUS AND MUCH LOVED NATURAL STATE SMOKED DUCK BREASTS You'll need duck breasts, bacon, marinade, charcoal, hickory chips Mix together the following ingredients (enough for 12 breast halves)2 Tablespoons each of: Paprika, Onion Powder, Brown Sugar, Cracked Pepper 1 Tablespoon each of: salt(sea salt preferred), Garlic Powder, Sage Rub generous amount on each duck breast. Marinate in the fridge for 4 hours or longer. Then wrap each breast in strips of bacon in a criss cross. Secure with a toothpick (lace through the bacon not the breast). Smoke over a water smoker with hickory chips for 2 - 2.5 hours. No longer unless you like shoe leather. Eat or immediately or wrap in foil till eaten.
