This is the best recipe for pheasant that I've ever tried and I've tried a few. The recipe can be cut or enlarged proportionately. 4 pheasant flour salt and pepper to taste 1/2 cup chopped onion 1/2 cup seedless raisins 1 cup chili sauce 1/2 cup brown sugar 2 tablespoons Worcestshire sauce 1/4 teaspoon garlic salt 1 cup sherry 1 can (16 oz) bing cherries,drained Shake quartered birds in seasoned flour. Brown birds in oil in skillet. Place birds in roaster. Combine onions,chili sauce brown sugar,Worcestershire sauce and garlic salt. Pour over birds,cover and bake for 1 1/2 hours in 300 degree oven. Remove cover and add sherry and cherries. Bake ,uncovered for additional 15 minutes. Yield 8 servings. Enjoy. I use wild South Dakota birds and it's getting close to time to go and get some more !
