As for exploring - the areas I've mentioned are good for that, the Georgian Quarter especially. Take in both Cathedrals (inside and out as well as the gardens at the Anglican Cathedral and the views from the Tower there are stunning too), Hope Street, Falkner Square, Bombed Out Church then you're down by Chinatown which is a bit down at heel these days but the Chinese Arch is worth a look. I'd head down to the Bridewell down the road from there if they're after a good pub too.
Round by St Georges Hall is worth a mooch too (Dr Duncan's is a good pub nearby). The Walker Art Gallery and World Museum are both free. Head in the library too, it's stunning and there are good views from the roof too. St John's Beacon is inexpensive too for good views out across the city. The Liver Building 360 experience is a bit more pricey but worth it IMO.
A bit cliched but the ferry is worth a trip too. If they're gonna do that though it's cheaper to get a Saveaway ticket (day public transport ticket) than a return on the ferry, although it means they have to get off at one of the stops over the water. I'd recommend Birkenhead if they do that, have a wander round Hamilton Square, grab a bevvy in Gallagher's then get the ferry or train back to Liverpool.
