I'd head along Dale Street/Tithebarn Street if they're after good pubs and not looking to stray too far. Thomas Rigby's, Lady of Mann, Ye Hole In Ye Wall, The Lion, Vernon Arms, Excelsior, Ship & Mitre. The Railway and Shenanigans have live music on on Saturdays. Oh, Ma Boyle's is close to their hotel too. Think they have jazz on of a Saturday.
If they're happy exploring then they could do a lot worse than head the other side of town though round the Georgian Quarter up by the two cathedrals. Probably the best pubs in the city centre round there (Grapes, Belvedere, Roscoe Head, Ye Cracke, Dispensary, Peter Kavanagh's, The Caledonia to name a few). The latter ought to have live music on.
There seems to be live music round pretty much every corner in Liverpool these days. Depends what they're after I guess. Mathew Street is a bit cliched and I find it a bit repetitive with different acts playing the same songs even the same mashups within an hour of each other. If they're into a bit of classic rock, it's not the best of pubs per se but the Amazing Kappa Band are ####ing ace and put on a boss show between 5pm and 10pm.
