Super easy and ready in a pinch
Oatmeal Raspberry Bar Cookies:
1/2 cup room temperature butter (I have substituted margarine with fine results.)
1/2 cup light brown sugar
1 cup flour
1/4 teaspoon baking soda
1/8 teaspoon salt
1 cup rolled oats
3/4 cup fruit only seedless raspberry jam (I have substituted any old jam or jelly in my cupboard, it's awesome with apple butter; I have even used fruit topping for sundaes. It all works.)
Heat the oven to 350°F. Butter an 8 inch square pan and line with aluminum foil. Butter the foil. (I skip the foil and am fine---there is a lot of butter here already.) Mix all the ingredients together except for the jam. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to within 1/4 inch of the edge. Sprinkle the remaining crumb mixture over the top and lightly press it into the jam. Bake 35 to 40 minutes and allow to cool on a wire rack before cutting.
I have done this with all sorts of jams and jellies and all are yummy.
