I like to use a piece of smoked bacon usually jowl or ham hock then add small potatoes before they are done.I will use bacon drippings instead if I have any.My grandma used lard in her day.
My favorite is white half runners.Mom and I always canned them so we had them all winter.I sure miss doing that with her.
One of my sisters would only use KY wonder beans.They are stringless but I prefer half runners.To me the extra stringing and breaking of them is worth the flavor...not all beans are created equal.
