Italian Chopped Salad Ingredients:
1 head of Romaine lettuce thinly sliced
half of an English cucumber quartered and thinly sliced
half of a small red onion thinly sliced
quarter head of radicchio thinly sliced
5 ounces salami thinly sliced
1 (15-ounce) can chickpeas drained and rinsed
1 cup cherry tomatoes quartered
1 cup mozzarella pearls
1/2 cup chopped fresh basil leaves
1/2 cup freshly-grated Parmesan cheese
1/2 cup sliced Kalamata or black olives
1/2 cup sliced pepperoncini
Red Wine Vinaigrette Ingredients:
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 garlic clove grated
1/2 teaspoon fine sea salt
1/4 teaspoon freshly-ground black pepper
Instructions
Mix the vinaigrette. Combine the dressing ingredients in a mason jar, cover, and shake until emulsified
