Chicken Orzo Bake

3 cups shredded cooked chicken breast
1-1/2 cups uncooked orzo pasta
3 cups unsalted chicken stock
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
1 package (5.3 ounces) Boursin garlic and fine herbs cheese
1 package (10 ounces) grape tomatoes
3 cups fresh baby spinach
1/2 cup finely grated Parmesan cheese
Preheat the oven to 425°. Grease a 13x9-in. baking dish.
Add chicken, orzo, chicken stock, garlic powder, dried oregano, salt and pepper to the baking dish; stir to combine. Place the Boursin cheese in the center of the baking dish. Sprinkle the tomatoes on top. Cover; bake for 30 minutes.
Uncover; stir in the spinach. Bake an additional 10 minutes or until the orzo is tender. Sprinkle with Parmesan cheese to serve.
