JIFFY REUBEN CASSEROLE
2 (16 oz.) cans sauerkraut, drained
1/2 c. chopped onions
1/4 to 1/2 c. chopped dried parsley
2 tsp. caraway seed
4 c. shredded Swiss cheese
1 2/3 c. Thousand Island dressing
2 (10 oz.) cans kosher corned beef, sliced or 1 lb. deli-style, sliced
8-10 slices cubed rye bread
1/2 c. melted butter
Mix drained sauerkraut, onions, parsley, and caraway seeds together. Place in bottom of buttered 9x13 inch glass dish or pan. Top with 2 cups cheese, 1/2 of Thousand Island dressing and all of the sliced corned beef. Top with remainder of cheese and dressing.
Toss rye bread cubes with melted butter and top CASSEROLE with bread cubes. Bake at 375 degrees for 35-45 minutes until heated and cheese melts.
Can be made ahead.
