Ingredients
1⅓ cups all-purpose flour, spooned and leveled
1 teaspoon baking soda
¼ teaspoon salt
2 medium over-ripe bananas, mashed (1 cup total)
¾ cup granulated sugar
8 tablespoons salted sweet cream butter, melted and cooled (divided into 6 tablespoons and 2 tablespoons)
4 tablespoons sour cream, room temperature
¾ teaspoon pure vanilla extract
2 large eggs, room temperature and beaten
½ cup chopped walnuts
Instructions
Add the flour, baking soda, and salt to a small mixing bowl. Whisk to combine. Set it aside.
Using a medium-sized mixing bowl and a handheld mixer on medium speed, mix the mashed bananas, granulated sugar, 6 tablespoons melted butter, sour cream, and vanilla just until incorporated.
Add the beaten eggs and mix just until no yellow streaks remain.
Fold in the flour mixture and the chopped walnuts.
Preheat the air fryer to 300°F (about 3 minutes).
Spray the 3 mini loaf pans with baker’s spray (Baker’s Joy or a generic version).
Divide the batter evenly among the 3 pans. Bake for 20 to 23 minutes until a toothpick inserted comes away clean.
Brush the remaining 2 tablespoons of melted butter over the top of the loaves while they are still hot. Allow the loaves to cool before removing and slicing.
Notes
You can also ripen your bananas in the air fryer. Place the bananas still in their peel in the air fryer at 300°F for 6 to 8 minutes. Let them cool, and then mash them for your recipe. Now you no longer have to wait until your bananas are ready, they can be ready in minutes!!
Make sure to check your air fryer manual for cooking time guidelines for your specific model, as times and temperatures vary depending on the type of air fryer you have.
Using the disposable mini loaf pans makes them perfect as gifts during the holidays.
If you have a small air fryer, you may need to cook the loaves in batches.
