Georgia Cracker Salad (Southern Favorite)
Servings: 4
1 sleeve Saltine crackers 4 oz. (about 35-40 crackers) – can use Ritz, etc.
3 medium tomatoes deseeded and chopped
3/4 cup mayonnaise
3 green onions finely chopped
1/8 tsp garlic powder
sea salt to taste
ground black pepper to taste
1 tbsp chopped parsley for garnish
In a mixing bowl, stir together chopped tomatoes, green onions, garlic powder, and mayonnaise. Add salt and pepper, to taste.
Crumble saltines and stir in to the tomatoes and mayonnaise mix. You want some big cracker pieces so don't crumble them too much. It will get mushy.
Garnish with chopped parsley. Serve right away.
