Cope's Baked Corn Supreme Recipe
This casserole method offers a more solidified, pudding-like texture.
1 (7.5-ounce) package Cope's dried sweet corn
5 cups cold milk
3 1/2 Tbsp. butter
2 tsp. salt, or to taste
3 Tbsp. granulated sugar
4 large eggs, well-beaten
Prep the corn: Grind the contents of the package in a food processor or blender to a coarse meal (some larger pieces are fine).
Combine ingredients: In a large mixing bowl, combine all ingredients (ground corn, milk, butter, salt, sugar, and beaten eggs) and stir thoroughly.
Rest: For best results, let the mixture sit at room temperature for 30-60 minutes before baking.
Bake: Pour the mixture into a buttered 2-quart casserole dish. Bake in a preheated 375°F (190°C) oven for about 60 minutes, or until the top is golden brown and the center is set.
Serve: Cool for a few minutes before serving hot.
