Clean and pierce the potatoes, cook in the AF on 380 for 40 minutes. Remove and let cool.
Cut the potatoes in half, lengthwise. Scoop out, leaving a small amount of potato around the edges to keep them from breaking. Keep insides for something else. Spray (or brush) oil on the scooped out halves.
Put them back in the AF at 400 for 7-10 minutes (until browned).
Remove, top with cheddar cheese and moderately cooked bacon.
Back in the AF for about 5-7 minutes to melt the cheese. Don't burn. Serve with sour cream (and chopped green onions or chives).
