DOUBLE PISTACHIO CAKE
1 (3 oz.) pkg. pistachio instant pudding
1 box white or yellow cake mix (your favorite)
4 eggs
1 cup club soda or water
1/4 cup vegetable oil
1/2 cup chopped pistachios
Preheat oven to 350°F. Grease and flour a 13x9-inch baking pan. Set aside.
Combine all ingredients in large bowl. Blend, then beat at medium speed for 4 minutes. Pour into prepared pan.
Bake at 350°F for 40 to 50 minutes or until cake begins to pull away from sides of pan. Do not underbake!
Cool in pan for 15 minutes. Remove from pan and finish cooling on wire rack. Top with Fluffy Pistachio Frosting.
FLUFFY PISTACHIO FROSTING:
1 (8 oz.) tub Cool Whip
1 (3 oz.) pkg. pistachio instant pudding
Mix Cool Whip and instant pudding and spread on cooled cake.
