AMISH POTATO SALAD
potatoes, cooked and diced
chopped onion
chopped celery
salt
diced hard cooked eggs
Dressing:
1 egg, beaten
6 T. sugar
1/2 tsp. cornstarch
salt
3 T. vinegar
1/4 C. cream
1/2 tsp. mustard
1 1/2 T. butter
1/2 C. mayo
Mix beaten egg with cornstarch, sugar and salt. Add vinegar, cream and mustard. Cook until thickened. Remove from heat and beat in butter. Add mayo and mix until smooth. Cool. Add potato, celery, hard cooked eggs, onion and salt to cooled dressing and fold together gently. Chill.
