We were talking about potato salad in another group and as I was looking for a recipe I use, I found this one. I am intrigued by the dressing they use. I bet this is good.

AMISH POTATO SALAD

potatoes, cooked and diced
chopped onion
chopped celery
salt
diced hard cooked eggs

Dressing:
1 egg, beaten
6 T. sugar
1/2 tsp. cornstarch
salt
3 T. vinegar
1/4 C. cream
1/2 tsp. mustard
1 1/2 T. butter
1/2 C. mayo

Mix beaten egg with cornstarch, sugar and salt. Add vinegar, cream and mustard. Cook until thickened. Remove from heat and beat in butter. Add mayo and mix until smooth. Cool. Add potato, celery, hard cooked eggs, onion and salt to cooled dressing and fold together gently. Chill.
