Servings: 8 croquettes
1 can (14 oz) salmon, drained and flaked
2 large eggs
⅓ cup almond flour (or breadcrumbs)
2 tablespoons mayonnaise
2 tablespoons chopped green onions
1 tablespoon Dijon mustard
1 teaspoon Old Bay seasoning
Salt and pepper, to taste
Olive oil spray
Preheat the air fryer to 400°F (200°C).
In a bowl, mix all ingredients together until well combined.
Form into 8 equal patties.
Lightly spray the air fryer basket with olive oil.
Place patties in a single layer, spray tops lightly with oil.
Cook for 8–10 minutes, flipping halfway, until golden and crispy.
Notes
Use fresh cooked salmon instead of canned for richer flavor.
Don’t overcrowd the air fryer basket for even crisping.
Serve with lemon wedges or a spicy aioli dip!
