Meat Loaves
3/4 lb ground beef
1 egg
1 tsp. salt
1/4 tsp. blk pepper
1 or 2 slices white bread, crust removed and torn into small pieces
1/3 C. minced onion or onion powder to taste
1/2 C. shredded carrot, optional
1 C. shredded Cheddar cheese
Sauce:
1/4 C. brown sugar
1/4 C. ketchup
1 T. yellow mustard
Heat oven to 400'.
For the sauce mix ketchup and yellow mustard. Add brown sugar and stir until smooth. Set aside.
Spray a foil-lined baking pan with rack with cooking spray.
Mix egg, salt and pepper with pieces of white bread. Mush around with your hands until it is smooth. Add ground beef, onion, carrot if using and Cheddar cheese. Shape into small loaves. Mine were about 2 x 4 inches. Place on sprayed rack in foil-lined pan. Brush with sauce.
Bake at 400' for 25 minutes checking to see that they don't get too dark. Check internal temp with thermometer. It should read 160. Mine was almost but not quite there so I brushed with more sauce and baked for 10-15 minutes more checking so it didn't burn or get too dark. Let stand for 5 minutes. Serve.
