1 onion, cut into half-moons
1/2 cup brown sugar
1 and 1/2 teaspoons Kosher Salt
1 and 1/2 teaspoons chili powder
1 and 1/2 teaspoons paprika (I prefer smoked)
1 teaspoon garlic powder
8 pieces bone-in, skin-on chicken (I like to use thighs)
1 (12-ounce) bottle beer
Place onion into a crockpot.
In a small bowl, mix together brown sugar, salt, chili powder, paprika, and garlic powder. Rub mixture all over each piece of chicken. Place over onions in crockpot.
Pour beer over the chicken.
Cover; cook on high for five hours or on low for seven to eight hours.
Notes
This chicken can be made ahead and frozen. Rewarm, covered, until heated through.
Variation:
Chicken can be prepared in the oven instead of a slow cooker. Prepare as directed and cover tightly. Bake at 350 degrees Fahrenheit for one and a half to two hours, until chicken is very soft.
