Return the onions and peppers to the skillet with the beef and toss to combine. Reduce the heat to low and sprinkle 1 1/2 cups of shredded provolone cheese over the mixture, stirring gently until melted and evenly distributed.
Spread the garlic butter evenly on the inside of both halves of the bread loaf.
Spoon the cheesesteak filling into the bottom half of the bread, spreading it out evenly.
Top the filling with the remaining 1/2 cup of shredded provolone cheese.
Place the assembled loaf on a baking sheet and close the top half of the bread over the filling.
Bake in the preheated oven for 10–12 minutes, or until the bread is golden and crispy, and the cheese is melted and bubbly.
Optional: Broil for 1–2 minutes at the end for extra crispiness (watch closely to avoid burning).
Remove from the oven and let cool for 2–3 minutes.
Garnish with freshly chopped parsley for a pop of color.
