When I make a roast I usually get 3 or 4 zip bags of leftovers for more meals out of it. When I make a meal with leftover's it's usually the meat mixed into something, like a stir fry, skillet meal or Mexican stuff so meat isn't the only ingredient. Hb used to eat a big piece of meat on his plate but no more.
Pork I'm at a loss with. I really don't care for it. Only like it in pork and sauerkraut because you can't taste it. Pork BBQ is OK, too.
We eat fish about once a week. We are kind of near good seafood but I'm a little intimidated with cooking seafood unless it's baked or broiled.
For chicken I buy a rotisserie chicken and shred it. I love it. I freeze in in zip bags and it's ready for pot pie, chx & waffles, casseroles and soups.
I try to make beef, pork, seafood and chicken every week for variety.
