1 (13oz) Package Smoked Sausage rope
2 Cups Small Broccoli Florets
2 Cups Shredded Sharp Cheddar Cheese, Divided
1 cup Long Grain Rice
1 Cup Chicken Broth
1 Tsp Garlic Powder
1/4 Tsp Black Pepper
14.5 oz Can Diced Tomatoes with Basil, Garlic, & Oregano
PREHEAT oven to 375°F
CUT smoked sausage into thin slices and set aside.
HEAT rice, broth, and seasoning in a 2 ½ quart saucepan; bring to a boil. Reduce heat to low, then cover and simmer for 10 minutes.
ADD broccoli to saucepan and continue cooking for 5 minutes.
MIX smoked sausage, tomatoes (with liquid), and ½ cup of cheese in with the rice and broccoli. Put into a 2-quart baking dish, then cover and bake for 20 minutes.
SPRINKLE any extra cheese onto smoked sausage bake. Continue to bake uncovered for 2–3 minutes until the cheese melts.
