Flo a nice fatty rib really needs to be bbq so the fat crisps up nicely, it adds a lot of flavor to the beef. My brother in law starts his beef ribs in a crockpot until they're almost done then he puts them on the bbg to crisp them up and they're always tasty and yes beef ribs tend to have a little less meat.
