1 Honeycrisp apple, diced
2 tablespoons light corn syrup
1 tablespoon honey
1 tablespoon maple syrup
1 pinch ground cinnamon, or more to taste
1 pinch brown sugar
2 ( 11 inch) flour tortillas
Heat a large skillet over medium-low heat. Add apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar; cook, stirring every few minutes, until apple is slightly softened and caramelized, 8 to 10 minutes. Transfer mixture to a bowl.
Place 1 tortilla in same skillet over medium-low heat; spread apple mixture on tortilla. Top with remaining tortilla. Cook until bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip quesadilla; cook until bottom tortilla is golden brown, 1 to 3 minutes more.
