1 ½ pounds boneless ribeye steaks cut into bite-sized pieces
6 gold Yukon potatoes cut into bite-sized pieces
1 Tablespoon olive oil
½ teaspoon kosher salt
½ teaspoon fresh cracked black pepper
¼ teaspoon smoked paprika
3 Tablespoons salted butter
3 cloves garlic minced
1 Tablespoon fresh chopped parsley
Preheat the air fryer to 400°F for 5 minutes.
In a large bowl, combine the steak bites, potatoes, olive oil, salt, pepper, and paprika. Toss to coat evenly.
Place the seasoned steak bites and potatoes in an even layer in the air fryer basket. No need to spray the basket.
Air fry for 12-15 minutes, shaking the basket halfway through, until the steak reaches your desired doneness and the potatoes are tender and golden brown.
WHILE THE STEAK BITES AND POTATOES ARE COOKING, PREPARE THE BUTTER SAUCE:
Melt the butter in a large skillet over medium heat.
Add the minced garlic and cook until fragrant, about 30 seconds.
Stir in the chopped parsley.
Once the steak bites and potatoes are done, add them to the skillet with the garlic butter sauce. Toss to combine for about a minute.
Serve immediately.
